The processing principle of FD vegetables is to quickly freeze the drained material, allowing the remaining water in the material to be converted into ice. Then, under vacuum conditions, the water molecules are directly sublimated from solid to gas, thereby completing dehydration.
Compared to AD vegetables, FD dehydrated vegetables can better retain the original nutritional components, color, and flavor of vegetables, but their processing costs are also relatively high, and are usually used for the processing of high-end vegetables
What are the uses of dehydrated vegetables
The application of dehydrated vegetables is currently mainly concentrated in three aspects:
